Christmas Cheer with EVOO

Have yourself a merry little Christmas this year by adding some Extra Virgin Olive Oil (EVOO) to your starters, mains or desserts this festive season. Fruity, fragrant, spicy or nutty, EVOO is super versatile and can be used in not only savoury but also sweet dishes.

If you are still on the look-out for the ultimate side-dish for your Christmas lunch or dinner, perhaps this deliciously vibrant goat cheese salad, created by Pumla’s Food is the answer. Not only will this be a great accompaniment to your meaty mains, but it will be a perfect centre-piece too.

Vibrant Goat Cheese Salad – Pumla’s Food

Ingredients 

  • 1/2 cup SA Olive delicate EVOO
  • 15 Kalamata Olives
  • 1 Small Cucumber – cut into thick half moons
  • 5 Yellow Sweet Paprika – chopped into chunks
  • 10 Cherry Tomatoes – halved
  • 1/2 Red Onion – sliced 
  • 1 Fresh Lemon – cut into thick half moons
  • 1 Plain Goat Cheese – sliced
  • 1 Cup of Fresh Bread Crumbs
  • 1 Egg – whisked
  • 1 bag of Rocket Salad Leaves

Method 

  • Toss all the veggies, except lemons, in about 2 tablespoons Extra Virgin Olive Oil, salt and pepper and keep aside.
  • Warm a non-stick griddle pan until slightly smoking. Grill the veggies presentation side down, about a minute, starting with fresh paprika and cucumbers. Keep aside.
  • Do the same with tomatoes, onion slices and lemons.
  • Slice the goats cheese, coat with flour, egg and fresh bread crumbs and fry in EVOO until lightly golden. 30 seconds each side in a hot pan.
  • Arrange all the veggies over a bed of rocket. Top with goat cheese and Kalamata olives.
  • Serve drizzled with the same delicate EVOO, and a good drizzle of aged balsamic vinegar.
